Caprese Cucumber Wraps

Makes 4-6 servings


  • 2 cucumbers
  • 4 fresh heirloom tomatoes, or 2 cups cherry tomatoes
  • 8 oz. mozzarella
  • ½ cup basil leaves
  • Olive oil
  • Balsamic vinegar
  • Salt
  • Pepper
  • Lettuce leaves, 1-2 per person


  1. Chop cucumber, tomato, basil and mozzarella into bite-sized pieces
  2. Mix into bowl and drizzle with olive oil and balsamic vinegar. Add salt and pepper to taste
  3. You can serve this as a salad, or scoop this mixture into lettuce leaves and eat it as a wrap. Enjoy!
