As tasted at the 2017 Harvest Dinner!

Time: Prep time 15 minutes
Serves:4 -6

Ingredients:

  • 3 medium beets
  • 2 Tablespoons tahini (sesame seed paste)
  • ¼ cup lemon juice
  • 1 clove garlic
  • ¼ cup olive oil
  • Salt to taste

Materials:

  • Cutting boards
  • Mixing bowl
  • Mixing spoon
  • Measuring spoons
  • Liquid measuring cup
  • Masher
  • Knife

What to Do:

  1. Roast whole beets in the oven at 375˚ until a knife inserts easily
  2. Peel the beets and then cut them into chunks, chop the garlic
  3. Mix all ingredients in large bowl and mash until well combined and reasonably smooth. Salt to taste.
