Black Bean Soup

Serves 6

Ingredients

  • 2 cans black beans, drained and rinsed
  • ¾ cup onion, diced
  • 3 cloves garlic, minced
  • 1 TBSP olive oil
  • ¾ cup shredded carrots
  • 1 can diced tomatoes
  • 3 cups vegetable broth
  • 1 tsp dried cumin
  • 1 tsp dried oregano
  • 1 tsp salt
  • ½ tsp pepper
  • Toppings: shredded cheese, Greek yogurt (or sour cream), cilantro (or anything else you choose!)

Directions

  1. Wash hands.
  2. Sauté diced onion and minced garlic in skillet with 1 TBSP olive oil.
  3. Add ¾ cup shredded carrots, diced tomatoes, vegetable broth, black beans, cumin, oregano, salt, and pepper.
  4. Simmer for 20-30 minutes.
  5. Serve with shredded cheese, Greek yogurt, and cilantro.  
  6. Enjoy!
