Lemon Mint Sorbet

Ingredients:

  • 5 cups sugar
  • 4 cups chopped fresh mint
  • Zest of 4 lemons, grated
  • 4 cups water
  • 2 cups lemon juice (6-8 lemons)

  • Ice cream scoop
  • Graters (2-3)
  • Juicer (2)
  • Scissors
  • Small bowls (3)
  • Salad spinner
  • Measuring cups
  • Electric skillet (2)
  • Ice chest
  • Ice cream maker
  • Ice
  • Ice cream salt
  • Whisks (2)

What to Do:

  1. Make a simple syrup by heating sugar and water over medium-high heat until the sugar has completely dissolved. Cook for one minute after bringing the sugar mixture to a boil.
  2. Remove from heat and add mint leaves and lemon zest to sugar syrup. Steep for 5 minutes. Strain syrup mixture, discarding mint and zest.
  3. Let the syrup mixture cool in ice box.
  4. Juice lemons, then add to cool syrup.
  5. Chill well before using ice cream machine.
