Ingredients:

  • 1 cup whole wheat cavatappi or rotini pasta, cooked
  • 1/2 cup small broccoli florets
  • 1/2 cup roma tomatoes, diced
  • 1/4 cup chickpeas, drained
  • 1/4 cup cucumber, chopped
  • 1/4 cup black olives, sliced
  • 1/4 cup carrots, shredded
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • Salt & pepper to taste

What to do:

  1. To prepare the vinaigrette, add salt, pepper, and vinegar to a large bowl and slowly whisk in the olive oil.
  2. Add pasta and veggies to the vinaigrette bowl and toss to coat.
