Dough
Ingredients:

  • 1 1/2 cups warm water or whey
  • 3 Tablespoons honey
  • 3 Tablespoons yeast
  • 1/2 teaspoon salt
  • 5 cups flour (approximately)
  • Oil

Materials:

  • Mixing bowl
  • Mixing spoon
  • Grain grinder *optional
  • Measuring cups
  • Measuring spoons

What to Do:

  1. In a bowl, mix water, honey, yeast and salt. Let sit 5 minutes (this is called “proofing” and you should notice your yeast start to get bubbly).
  2. Grind grain and measure 1 cup at a time into yeast mixture stirring and gradually adding more flour to form a stiff dough.
  3. Knead the dough.
  4. Place dough in a clean oiled bowl/pan, cover and let rise until ready to cook.

 

Sauce
Ingredients:

  • 2 Tablespoons olive oil
  • 1/2 cup chopped onion
  • 1 clove garlic
  • 1 3/4 lbs tomatoes
  • 1 carrot and/or zucchini
  • 2 kale leaves
  • 2 Tablespoons parsley, minced
  • 2 Tablespoons basil, minced
  • Salt and pepper

Materials:

  • Cutting boards
  • Knives
  • Measuring spoons
  • Measuring cups
  • Grater
  • Skillet
  • Food processor *optional

What to Do:

  1. In a skillet, heat olive oil.
  2. Chop onion then add to skillet and saute.
  3. Grate carrot, chop leaves and mince parsley. Add to skillet and sauté 10 minutes.
  4. Grate carrot/zucchini, chop leaves and mince parsley. Add to skillet and sauté 10 minutes.
  5. Chop tomatoes, mince garlic and basil. Add to skillet and season with salt and pepper.
  6. Simmer sauce until thick. (For a smoother sauce, blend in a food processor.)

 

Cheese
Ingredients:

  • 1 gallon milk
  • Lemon juice
  • Salt
  • Fresh herbs, chopped

Materials:

  • Stainless steel pot
  • Thermometer
  • Colander
  • Cheese cloth (or pillow case)
  • Bowl (for catching whey)

What to Do:

  1. In a stainless steel pan, heat milk to 185° F degrees.
  2. Add lemon juice a Tablespoon at a time until curds and whey separate (up to 1 cup).
  3. When milk has separated, pour through a colander lined with cheese cloth/pillow case. The liquid (whey) can be saved for baking and used in a bread recipe in place of milk or water.
  4. Gently work salt and herbs into the curds (the solid part).
  5. Gently wring liquid out of cheese and let the cheese hang for 30 minutes.
