Sunny Hummus

Serves 10 preschoolers for snack

Ingredients:

  • 1 can garbanzos (15 oz)

  • ⅓ cup sunbutter

  • ¼ cup lemon juice

  • 1 tsp salt

  • 2 tsp garlic, minced (or ¼ tsp powdered ginger)

  • 1 TBSP olive oil

  • Carrots (10 large)

  • Celery (5 stems) — or other veggies!

Directions:

  1. Wash hands.
  2. In a large bowl, add garbanzos and mash with a potato masher until smooth.
  3. Add sun butter, lemon juice, salt, garlic, and olive, and mix well
  4. Cut carrots and celery into sticks
  5. Scoop hummus with carrots and celery and other veggies.
  6. Enjoy!
