Veggie Frittata


  • 1 TBL olive oil
  • 2-3 cups of veggies, chopped (onions, peppers, potatoes, squash, spinach, etc.)
  • 10 eggs
  • ½ cup whole milk
  • ½ cup cheese, grated


  1. Wash hands.
  2. Preheat oven to 350 F
  3. Sauté vegetables with olive oil in a pan
  4. In a bowl, whisk together eggs, milk, and cheese. Add the vegetables.
  5. In a greased baking pan, pour in the egg mixture and bake for about 30 minutes, or until eggs are fully cooked.
  6. Enjoy!
