Serves up to 10 preschoolers for snack
Ingredients:
- Strawberries (3)
- Clementines/tangerines (3-5)
- Apples (2)
- Sugar snap peas (20 peas, at least)
- Kale (10 leaves)
- Beets (2-3)
- Purple cabbage (1 cup, shredded)
- 2 cups each sunflower seeds and pumpkin seeds (also for parfaits)
Directions:

Wash hands.

Wash fruits and veggies

Cut fruits and veggies into various shapes, or leave whole (e.g. peas and strawberries)

Form insects using the different fruits, veggies, and seeds for body, legs, antennae and eyes.

Backyard Caterpillar version:
Ingredients:
- Radishes
- Chives
- Kale and/or lettuce
- Hummus
- Olives
- Sesame seeds
Directions:
- Wash hands.
- Spread hummus on a kale/lettuce leaf
- Slice radishes and line them up on top of the hummus to look like a caterpillar
- Cut small pieces of chives to look like antenna
- Half olives to look like a smile
- Sesame seed eyes
