Ingredients:
- 1 cup whole wheat cavatappi or rotini pasta, cooked
- 1/2 cup small broccoli florets
- 1/2 cup roma tomatoes, diced
- 1/4 cup chickpeas, drained
- 1/4 cup cucumber, chopped
- 1/4 cup black olives, sliced
- 1/4 cup carrots, shredded
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- Salt & pepper to taste
What to do:
- To prepare the vinaigrette, add salt, pepper, and vinegar to a large bowl and slowly whisk in the olive oil.
- Add pasta and veggies to the vinaigrette bowl and toss to coat.
