Serves 4-6 people
Ingredients:
- 1 box of whole grain pasta
- 2 cups of black beans
- 1 cup of corn
- 1 can of diced tomatoes
- ½ medium onion, diced
- 2 cups of chopped greens
- Olive oil, cilantro, salt, pepper, cumin, or oregano, to taste.
Directions:
- Cook pasta
- Add rinsed beans, corn, tomatoes, onion, and greens to the cooked pasta
- Drizzle with oil and add flavor by pinching in so cilantro, salt, pepper, cumin, or oregano! Try them all!
