Ingredients:
- 1 TBL olive oil
- 2-3 cups of veggies, chopped (onions, peppers, potatoes, squash, spinach, etc.)
- 10 eggs
- ½ cup whole milk
- ½ cup cheese, grated
Directions:
- Wash hands.
- Preheat oven to 350 F
- Sauté vegetables with olive oil in a pan
- In a bowl, whisk together eggs, milk, and cheese. Add the vegetables.
- In a greased baking pan, pour in the egg mixture and bake for about 30 minutes, or until eggs are fully cooked.
