Ingredients:

  • Zucchini
  • Herbs (basil, cilantro, parsley and/or mint)
  • Toasted sunflower seeds
  • 1 clove fresh garlic
  • 1/4 cup olive oil
  • salt & pepper to taste

Materials:

  • Colander
  • Vegetable peeler
  • Blender

What to Do:

  1. Wash Zucchini and herbs in colander and pat dry
  2. To make “linguini noodles”, use vegetable peeler to create ribbons of zucchini, set aside
  3. To make pesto, put all other ingredients in a blender and blend until smooth
  4. Add pesto to zucchini linguini, and enjoy!
