Ingredients:
- Zucchini
- Herbs (basil, cilantro, parsley and/or mint)
- Toasted sunflower seeds
- 1 clove fresh garlic
- 1/4 cup olive oil
- salt & pepper to taste
Materials:
- Colander
- Vegetable peeler
- Blender
What to Do:
- Wash Zucchini and herbs in colander and pat dry
- To make “linguini noodles”, use vegetable peeler to create ribbons of zucchini, set aside
- To make pesto, put all other ingredients in a blender and blend until smooth
- Add pesto to zucchini linguini, and enjoy!
